So finally, after I don't know how long, I have gotten back into the kitchen.... and do I have a treat for you!!!!
I found a great Keto brownie recipe on Yummy Inspirations, who had adaped a Nigella recipe. But when I made it, it didn't quite work for me. So, I tried a few changes and settled on the one below using dates as my sweetness.
It's pretty easy and especially delicious after 2 or 3 days in the fridge. Do yourself a favor: MAKE SURE YOU COOL IT TOTALLY before taking it out the oven dish or it cracks.
Preheat oven to 180 degrees C.
Line and spray a 20 x 20 square dish (I use silicon)
200g Butter (salted...unsalted...both work)
100g (yes grams) Cream
150g Dark chocolate (the darker the better)
1 teaspoon Vanilla
1/2 cup Coconut flour
25ml Cocoa powder
Cream cheese filling
230g Med fat cream cheese
Melt butter. Mix with cream and dates and blend till smooth. Add to bowl with chocolate and heat for 1.30 min then stir to melt choc in. Let cool slightly. Add vanilla, add eggs and cocoa. Whisk well to mix. Add coconut flour in bit by bit and mix in well. Put batter aside.
Blend strawberries and dates till smooth, then mix with cream cheese.
Put half the batter into the dish and smooth.
Pour the cream cheese ontop and smooth .... DO NOT MIX WITH BATTER
Dollop remaining batter on top of cream cheese and carefully smooth it over.
Bake for 30 mins.
Leave to cool well...REALLY WELL, like once cooled you can pop in fridge for an hour if you like! Then cut and put in dish in fridge.
