So since starting Banting two weeks ago, I wanted to move on from just the usual options and am starting to try out carb free baking and things like ....flapjacks!
I am not claiming these to be the best in the world, it was my first try and I think they came out great. I kinda eyeballed and guessed the ratio's. The 3 eggs MAY have been too many, but I don't think so. If you want to try this with 2, then go for it.
120ml coconut flour; 60ml Psyllium Husk powder (I just used my measuring cup); 3 eggs; 150ml full cream milk, 100ml water (add this last to get the texture right as Psyllium husk binds a lot).
Mix together till loose but not runny and then drop scoops into a hot pan with melted coconut oil. Kind of flatten (this will work better once turned tho). Once they are firm enough to flip, flip and then squash down with the egg lifter. Flip once or twice more until cooked and golden.
Serve with either full cream plain yoghurt with cinnamon in and some xylitol in and cinnamon, or if you can have fruit then steam some and mix into the yoghurt before spooning over.
You can also serve them with bacon and eggs or grated cheese.
Note: I didn't put any sweetener or salt in my flapjacks so they very plain, but you can try that or maybe some herbs and a bit of grated cheese or grated onion for savory....just a thought.
